Unlike most commercial olive oil producers, the Bariani family is more quality oriented than profit oriented.
Much of Bariani’s estate grown and olive oil processing is done traditionally using a stone crusher. Bariani makes two types of quality olive oil with olives grown from their 100+ year trees:
1) from green olives only - 16.9 oz. - $13 - has a grassy taste.
2) from a blend of green and black olives- has no grassy taste, 16.9 oz. - $10 (Black olives are from last year’s crop)
Though they are not organic certified, they do not employ any pesticides. In my opinion, Bariani makes best olive oil money can buy.

Olives go from dark green to yellow-green to purple to black with white flash to black to black flesh. The highest concentration of polyphenols are concentrated in the purple stage.
