Almond Crusted Halibut

Here is a very simple, tasty, and nutritious dish to make.

YOU WILL NEED:

  • Halibut
  • Chopped Cilantro (enough to the top of the halibut)
  • Almonds
  • Lemon
  • Salt & Pepper

1) Grind some almonds in the coffee or spice grinder. This will become the crust. If you have any left overs after this dish, you can use this on your cereals (as long as you do not contaminate it).

2) Add some salt & pepper.

3) Add the almonds & cilantro on top. Squeeze some lemon juice and top with some lemon zest if you like.

4) Wrap the halibut in parchment, and bake between 300 to 325F until the fish is opaque white. The approximate time will vary, but it is approximately 10 minutes per inch of fish.

Lemongrass Chicken

Here is a very tasty way to prepare your chicken. It is easy to prepare and no measurement is needed. Prepare your ingredients just enough to cover the chicken.

You will need:

  • Chicken
  • Lemongrass
  • Tamari or Soy Sauce
  • Garlic
  • Ginger

1) Mince some ginger with a microplane.

2) Lemongrass is a common spice used in Thai cuisine and can be found in an Asian supermarket as well as Wholefood. To use, remove the outer leaves, the top stems, and chop into pieces. You are using the bottom portion only.

3) Chop some garlic.

4) Add some soy sauce, just enough to cover the chicken.

5) Cover an bake in an oven at 375F for about 40 minutes or until flesh is no longer pink.

6) You can then use the bones to make chicken broth. Simply add carrots, onions, celery, thyme (or any other spice), water, and salt. I added about 2 1/2 quarts of water to this half of a chicken and simmer for about an hour. Add parsley towards the last half an hour and pepper at the end.
